Quest’affettatrice a volano apparteneva a mio nonno e risale circa agli anni ’30. Le normali affettatrici sono composte principalmente da una lama rotante affilata, con diametro variabile, sulla quale viene fatto scorrere con ausilio di un carrello il salume che si intende tagliare. Sulla macchina affettatrice è generalmente posta anche una rotella che permette di regolare la dimensione del taglio che può variare da pochi millimetri, fino a circa un centimetro. Le operazioni di taglio vengono eseguite sul lato destro della lama, quello che taglia, mentre sul lato opposto la lama è opportunamente sagomata in modo che non tagli e non crei pericolo a chi opera con la macchina. La fetta tagliata fuoriesce attraverso la parte non tagliente della lama e può essere comodamente raccolta dall’operatore.

This flywheel slicer belonged to my grandfather and dates back to the 1930s. Normal slicers are mainly composed of a sharp rotating blade, with variable diameter, on which the salami to be cut is made to slide with the aid of a trolley. On the slicing machine there is generally also a wheel that allows you to adjust the size of the cut which can vary from a few millimeters to about one centimeter. The cutting operations are performed on the right side of the blade, the one that cuts, while on the opposite side the blade is suitably shaped so that it does not cut and does not create danger to those who work with the machine. The cut slice comes out through the non-cutting part of the blade and can be easily picked up by the operator.

Questo è l’ingranaggio che permette di regolare lo spessore della fetta di salume che verrà tagliata dall’affettatrice a volano sopra raffigurata. Girando la manopola in senso orario si aumenta lo spessore fino a 1 cm, mentre girandola in senso antiorario lo spessore diminuisce.

Van Berkel era un macellaio con una grande passione per la meccanica. Si era prefisso di riuscire a costruire una macchina che gli consentisse di tagliare le fette di carne senza dover ricorrere al taglio manuale con il coltello. Dopo innumerevoli tentativi, ebbe finalmente l’idea giusta: una lama concava che ruotava perpendicolarmente contro un piatto mobile che scorreva avanti e indietro e sul quale era stato appoggiato il pezzo di carne o di salume da tagliare. Fu così che inventò l’affettatrice meccanica.
Il 12 ottobre 1898, van Berkel fonda la prima fabbrica a Rotterdam e già nel 1899, dopo un anno di attività, produce e consegna 84 affettatrici. Negli anni seguenti la produzione aumenta in maniera molto rapida. Data la grande utilità pratica della nuova invenzione, il successo della ditta Berkel è immediato, massiccio e mondiale.
La Berkel è stata una delle prime ditte (se non addirittura la prima in assoluto) a proporre ai propri clienti il sistema del pagamento rateale.

Van Berkel was a butcher with a great passion for mechanics. He set out to be able to build a machine that would allow him to cut slices of meat without having to resort to manual cutting with a knife. After countless attempts, he finally had the right idea: a concave blade that rotated perpendicularly against a movable plate that slid back and forth and on which the piece of meat or salami to be cut had been placed. That was how he invented the mechanical slicer.
On 12 October 1898, van Berkel founded the first factory in Rotterdam and already in 1899, after a year of activity, produced and delivered 84 slicers. In the following years the production increases very rapidly. Given the great practical utility of the new invention, the success of the Berkel company is immediate, massive and worldwide.
Berkel was one of the first companies (if not the first ever) to offer its customers the installment payment system.
